Admiral Bread (Toast)
Ingredients
- 2500 g - 25% Flour
- 2500 g - 25% Wholemeal
- 5000 g - 50% Vitason Multigranen (multigrain) 50%
- 200 g - 2% Fresh Yeast
- 5400 g - 54% Water approx.
Decoration:
- 1000 g - 10% Sesame Seeds
- 1000 g - 10% Sunflower Seeds
Working method
- Mix all ingredients into a smooth and well developed dough
- Dough temperature: approx. 26°C
- Scale: Dough pieces approx. 800 grams and rounding
- Dough proof: Approx. 50 minutes
- Mould as a long loaf Decorate with a mixture of sunflower and sesame seeds and place the dough pieces into toast baking tins
- Final proof: Approx. 60 minutes (3/4 proofing time)
- Baking: approx. 35 minutes at 220°C
- Just before baking place the lids on the baking tins
