Celebread with Cheese Topping (Pomodori)
Ingredients
- 10000 g - 100% Flour
- 1500 g - 15% Sonextra Marinade Pomodori
- 300 g - 3% QS Croustillant (Crispy)
- 250 g - 2.5% Fresh Yeast
- 100 g - 1% Salt
- 5500 g - 55% Water approx.
Decoration:
- Grated Cheese
Working method
- Mix all ingredients into a smooth and well developed dough
- Dough temperature: approx. 26ºC
- Scale: approx. 1100 grams (30 pieces)
- Dough proof: Approx. 10 minutes
- Divide, round up and place 10 pieces into a pie-plate
- Final proof: Approx. 70 minutes
- Baking: approx. 16 minutes at 240ºC
- Decorate as desired. Preferably with grated cheese
