Ingredients
- 5000 g - 50% Flour (High-protein)
- 5000 g - 50% Vitason Mais (maize) 50%
- 1000 g - 10% QS Luxe Superieur (Soft Luxury Bread)
- 800 g - 8% Fresh Yeast
- 500 g - 5% Crème Sonnomel
- 5600 g - 56% Water approx.
Filling:
- 4000 g - 40% Raisins
- 2000 g - 20% Ginger
Working method
- Mix all ingredients into a smooth and well developed dough After kneading directly mix filling in
- Dough temperature: approx. 26ºC
- Scale: approx. 1800 grams (30 pieces)
- Divide but do not round up Place the dough pieces on baking sheets
- Final proof: Approx. 60 minutes
- Baking: Approx. 9 minutes at 250ºC
For better softness in the baked product, we recommend to wash again delivered raisins/currants and soak them briefly
