Crispy Champions Rolls
Ingredients
- 5000 g - 50% Flour
- 5000 g - 50% Vitason Licht Meergranen (multigrain light) 50%
- 400 g - 4% Fresh Yeast
- 300 g - 3% Sonplus Krokant Extra (Crispy)
- 5700 g - 57% Water approx.
Decoration::
- 200 g - 2% Sunflower Seeds approx.
- 100 g - 1% Poppy Seed approx.
- 100 g - 1% Sesame Seed approx.
Working method
- Mix all ingredients into a smooth and well developed dough
- Dough temperature: approx. 26ºC
- Scale: approx. 1800 gram (30 pieces)
- Dough proof: Approx. 15 minutes
- Flatten the dough pieces Moisten bottom and upper side Press the bottom side into sunflower seeds, press the upper side into a mixture of sesame and poppy seeds Divide but do not round up Place the dough pieces on baking sheets
- Final proof: Approx. 70 minutes
- Baking: approx. 18 minutes at 230ºC with steam
