Dark Multigrain Loaf (Belgian)

Ingredients

  • 7000 g - 70% Flour
  • 3000 g - 30% Basic Donker Meergranen 35% (multigrain dark)
  • 5500 g - 55% Water approx.

Decoration:

  • 1750 g - 17% Mais Grids
  • 750 g - 7% Poppy Seeds

Working method

  • Mix all ingredients into a smooth and well developed dough
  • Dough temperature: approx. 26ºC
  • Scale: Dough pieces approx. 700 grams and rounding
  • Dough proof: Approx. 30 minutes
  • Mould as a loaf Decorate with a mixture of mais grids and poppy seeds and place the dough pieces on with rice flour prepared inserter or baking sheets
  • Incise just before baking as desired
  • Final proof: Approx. 65 minutes
  • Baking: Approx. 35 minutes at 230ºC with steam Open steam slide for the last 15 minutes
