Ingredients
- 5000 g - 50% Wholemeal
- 3500 g - 35% Basic Donker Meergranen 35% (multigrain dark)
- 1500 g - 15% Sunflower Seeds
- 5900 g - 59% Water approx.
Decoration:
- 1000 g - 10% Sunflower Seeds
Working method
- Mix all ingredients into a smooth and well developed dough
- Dough temperature: approx. 27ºC
- Scale: Dough pieces approx. 815 grams and rounding
- Dough proof: Approx. 30-40 minutes
- Mould as a long loaf Decorate with Sunflower Seeds and place the dough pieces into baking tins
- Final proof: Approx. 65 minutes
- With lid Final proof: Approx.35-40 minutes at 230ºC
