- 6.830 g Sonfit Low Carb Brown 68.3%
Working method
- Knead all ingredients into a smooth and good developed dough. Mix and knead longer than usual.
- Dough temperature: approx. 26°C.
- Dough pieces approx. 650 grams and rounding.
- Dough proof: approx. 30 minutes.
- Mould the dough pieces as desired, round or long shape and place them on arice flower prepared inserters or baking sheets.
- Final proof: approx. 60 minutes.
- Incise as desired just before baking.
- Bakek: approx. 35 minutes at 230-240°C.
