Mini Quark Buns Fried based on Sonnet Variatiemix Kwark

Ingredients

  • 20000 g - 200% Sonnet Variatiemix Kwark
  • 10000 g - 100% Flour
  • 1000 g - 10% Liquishort cake
  • 5000 g - 50% Eggs
  • 11000 g - 110% Water approx.

Decoration::

  • Fine Granulated Sugar (eventual with Cinnamon)

Working method

  • Mix all ingredients into a smooth and developed dough. Mixing time approx. 5-7 minutes at first speed in a planetmixer.
  • Dough temperature: approx. 24ºC.
  • Dosing with a dosingmachine or with piping bag. Do not make too large (approx. 18 grams) balls in relation to well done baking.
  • In frying oil with a temperature of approx. 180ºC (baking time depends on the volume of the balls).
  • Finish with fine granulated sugar (eventual with cinnamon).
