Pro Heart Loaf - Sonplus Krokant Extra (Crispy) and SonFit ProHeart
Ingredients
- 5.700 g Water approx. 57 %
- 5.000 g Wholemeal 50 %
- 5.000 g SonFit ProHeart 50%
- 220 g Fresh yeast 2.2%
- 100 g Sonplus Krokant Extra (Crispy) 1%
Decoration:
- 250 g Sesame seeds 2.5%
- 250 g Linseed 2.5%
- 250 g Sunflower seeds 2.5%
Working method
- Mix all ingredients into a smooth and well developed dough.
- Dough temperature: approx. 26°C.
- Scale dough pieces approx. 445 gram and rounding.
- Dough proof: approx. 40 minutes.
- Mould as a long loaf and decorate with the mixture of sesame seed, linseed and sunflower.
- Place the dough pieces on inserter or baking sheets.
- Final proof: approx. 65 minutes.
- Before baking incise three times
- Bake: approx. 35-40 minutes at 225ºC
- Bake in rotation oven: approx. 35-40 minutes at 210ºC
