Pro Heart Toast Bread

Ingredients

  • 5.700 g Water approx. 57%
  • 5.000 g Wholemeal 50%
  • 5.000 g SonFit ProHeart 50%
  • 220 g Fresh yeast 2.2%

Decoration:

  • 250 g Sesame 2.5%
  • 250 g Linseed 2.5%
  • 250 g Sunflower 2.5%

Working method

  • Mix all ingredients into a smooth and well developed dough.
  • Dough temperature: approx. 26°C.
  • Scale dough pieces approx. 900 gram and rounding.
  • Dough proof: approx. 20 minutes.
  • Mould as a long loaf.
  • Decorate with the mixture of sesame, linseed and sunflower seeds and place douch pieces in toast baking tins.
  • Final proof: approx. 65 minutes.
  • Bake: approx. 35-40 minutes at 225ºC with a little steam.
  • Bake: in rotation oven: approx. 35-40 minutes at 215ºC with a little steam.
