Ingredients
- 10000 g - 100% Flour
- 400 g - 4% Sugar
- 300 g - 3% Sonplus Spray
- 150 g - 1.5% Salt
- 80-100 g - 0.8-1% Dry Yeast
- 35 g - 0.35% Sonplus Toast Export
- 5500 g - 55% Water approx.
Working method
- Mix all ingredients into a smooth and well developed dough
- Dough temperature: approx. 27ºC
- Dough proof: Approx. 5-10 minutes
- Scale: Dough pieces approx. 800 grams and rounding
- Mould as a long loaf Place the dough pieces into baking tinstin bread
- Final proof: Approx. 70-80 minutes
- Baking: approx. 30 minutes at 230ºC
