Soft Corn Buns

Ingredients

  • 5000 g - 50% Flour
  • 5000 g - 50% Vitason Mais (maize) 50%
  • 1000 g - 10 % Sonplus Luxe (Luxury)
  • 600 g - 6% Fresh Yeast
  • 5500 g - 55% Water approx.

Working method

  • Knead all ingredients into a smooth and well developed dough
  • Dough temperature: approx. 26ºC
  • Scale: approx. 1600 gram (30 pieces)
  • Dough proof: Approx. 10 minutes
  • Final proof: Approx. 70 minutes
  • Baking: Approx. 9 minutes at 260ºC
  • Divide and round up. Place the doughpieces on the bakingsheet
  • Decorate as desired
| Creations premixes are to be dosed between 10% and 40%. The higher the dose, the more tender the bread, the richer the filling and the darker crumb color.
