  • 500 g - 5% Fresh Yeast
  • 5200 g - 52 % Water approx.

Decoration::

  • 300 g - 3% Rye flour

Working method

  • Knead all ingredients into a smooth and well developed dough
  • Dough temperature: approx. 26ºC
  • Scale: approx. 1800 gram (30 pieces)
  • Dough proof: Approx. 15 mins
  • Divide and round up. Place the doughpieces on the bakingsheet
  • Final proof: Approx. 80 minutes
  • Baking: approx. 9 minutes at 270ºC
  • Before baking with Rye flour
