- 300 g - 3% Rye flour
Working method
- Knead all ingredients into a smooth and well developed dough
- Dough temperature: approx. 26ºC
- Scale: approx. 1800 gram (30 pieces)
- Dough proof: Approx. 15 mins
- Divide and round up. Place the doughpieces on the bakingsheet
- Final proof: Approx. 80 minutes
- Baking: approx. 9 minutes at 270ºC
- Before baking with Rye flour
