- 5.200 g Water approx. 52%
- 5.000 g Flour 50%
- 5.000 g SonFit Active Flora 50%
- 200 g Fresh yeast 2%
- 100 g Sonplus Krokant Extra (Crispy) 1%
Working method
- Mix all ingredients into a smooth and well developed dough.
- Dough temperature: approx. 26°C.
- Scale dough pieces approx. 900 grams and rounding.
- Dough proof: approx. 40 minutes.
- Mould as a long loaf and place the dough pieces on a with rice flour prepared inserter or baking sheets.
- Final proof: approx. 70 minutes.
- Just before baking incise as desired.
- bake approx. 35 minutes at 225ºC with steam.
