Sunflower Kernel Sandwich Bread

Ingredients

  • 5000 g - 50% Flour T65
  • 5000 g - 50% VitaSon Zonnepit (sunflowerseed) 50%
  • 1000 g - 10% Dairy Butter
  • 400 g - 4% Caster Sugar
  • 200 g - 2% Fresh Yeast
  • 5400 g -54% Water approx.

Working method

  • Knead all ingredients into a smooth and well developed dough
  • Dough temperature: approx. 26ºC
  • Scale: approx. 930 grams and rounding
  • Dough proof: Approx. 50 minutes
  • Mould as a long loaf and divide the dough pill into four equal pieces. Turn each piece a quarter and lay them against each other in a casino baking tin (four pieces)
  • Final proof: Approx. 60 minutes
  • Insert at 260ºC and bake approx. 30 minutes at 230ºC
