  • 200 g - 2% QS Croustillant (Crispy)
  • 200 g - 2% Fresh Yeast
  • 150 g - 1.5% Salt
  • 6300 g - 63% Water Approx.

Working method

  • Knead all ingredients into a smooth and well develloped dough
  • Dough temperature: approx. 26°C
  • Scale: approx. 900 gram
  • Dough proof: Approx. 35 minutes
  • Make into a desired shape
  • Apply matching decoration
  • Final proof: Approx. 60 minutes, optionally cut before baking
  • Baking: Approx. 35 minutes at 230°C, with steam
  • Baking in rotation oven: Approx. 35 minutes at 210°C, with steam
