BARLEYmax Crop Grains Bloomer based on BARLEYmax Rustic Mix

Ingredients

  • 5000 g – 50% Wholemeal
  • 5000 g – 50% BARLEYmax Rustic Mix
  • 250 g – 2,5% Fresh yeast
  • 6500 g – 65% Water approx.

Working method

  • Knead all ingredients into a smooth and well developed dough.
  • Dough temperature approx. 26°C.
  • Scale dough pieces (910 grams or 460 grams) and rounding.
  • Dough proof approx. 45 minutes.
  • Mould as desired, round or long shape, and place the dough pieces into proofing baskeds or on with rice flour prepared inserters or baking sheets.
  • Final proof approx. 60 minutes.
  • Bake approx. 35-40 minutes at 230°C with steam (small bloomers approx. 25 minutes).
