Spelt Buns based on Sonbro Spelt Licht
Ingredients
- 10000 g – 100% SONBRO SPELT LICHT
- 1000 g – 10% QS ZACHT LUXE
- 600 g – 6% Fresh Yeast
- 4700 g – 47% Water approx.
Working method
- Mix all ingredients into a smooth and well developped dough. Mix 8 minutes in low speed, knead 1 minute in high speed.
- Dough temperature approx. 26°C.
- Scale dough pieces approx. 1800 grams (30 pieces) and rounding.
- Dough rest approx. 5 minutes.
- Divide, round up, decorate and place on baking slides.
- Final proof approx. 70 minutes.
- Baking approx. 9 minutes at 240°C.
