White Toast Bread based on FermenSon Duo
Ingredients
- 10.000 g – 100% Flour
- 6.200 g – 62% Water approx.
- 200 g – 2% Fresh Yeast
- 136 g – 1,36% Salt
- 100 g – 1% FERMENSON DUO
- 100 g-1% SONEXTRA SHORTENING CLEAN LABEL
Working method
- Knead all ingredients into a smooth and well developed dough.
- Dough temperature approx. 27°C.
- Scale dough pieces approx. 910 grams and rounding.
- Dough proof approx. 5-10 minutes.
- Mould as a long loaf, place the dough pieces into toast baking tins.
- Final proof approx. 60-70 minutes.
- Baking approx. 30 minutes at 230°C.
