White Toast Bread based on FermenSon Duo

Ingredients

  • 10.000 g – 100% Flour
  • 6.200 g – 62% Water approx.
  • 200 g – 2% Fresh Yeast
  • 136 g – 1,36% Salt
  • 100 g – 1% FERMENSON DUO
  • 100 g-1% SONEXTRA SHORTENING CLEAN LABEL

Working method

  • Knead all ingredients into a smooth and well developed dough.
  • Dough temperature approx. 27°C.
  • Scale dough pieces approx. 910 grams and rounding.
  • Dough proof approx. 5-10 minutes.
  • Mould as a long loaf, place the dough pieces into toast baking tins.
  • Final proof approx. 60-70 minutes.
  • Baking approx. 30 minutes at 230°C.
