Admiral Bread (Toast)
Ingredients
- 5.400 g - 54% Water approx.
- 5.000 g - 50% Vitason Multigranen (multigrain) 50%
- 2.500 g - 25% Flour
- 2.500 g - 25% Wholemeal
- 200 g - 2% Fresh yeast
Decoration:
- 1000 g - 10% Sesame seeds
- 1000 g - 10% Sunflower seeds
Working method
- Mix all ingredients into a smooth and well developed dough.
- Dough temperature: approx. 26°C.
- Scale dough pieces approx. 800 grams and rounding.
- Dough proof: approx. 50 minutes.
- Mould as a long loaf and decorate with a mixture of sunflower and sesame seeds. Place the dough pieces into toast baking tins.
- Final proof: approx. 60 minutes (3/4 proofing time).
- Just before baking place the lids on the baking tins.
- Bake: approx. 35 minutes at 220°C.
