Admiral Bread (Toast)

Ingredients

  • 5.400 g - 54% Water approx.
  • 5.000 g - 50% Vitason Multigranen (multigrain) 50%
  • 2.500 g - 25% Flour
  • 2.500 g - 25% Wholemeal
  • 200 g - 2% Fresh yeast

Decoration:

  • 1000 g - 10% Sesame seeds
  • 1000 g - 10% Sunflower seeds

Working method

  • Mix all ingredients into a smooth and well developed dough.
  • Dough temperature: approx. 26°C.
  • Scale dough pieces approx. 800 grams and rounding.
  • Dough proof: approx. 50 minutes.
  • Mould as a long loaf and decorate with a mixture of sunflower and sesame seeds. Place the dough pieces into toast baking tins.
  • Final proof: approx. 60 minutes (3/4 proofing time).
  • Just before baking place the lids on the baking tins.
  • Bake: approx. 35 minutes at 220°C.
