Ardennes Tin Bread
Ingredients
- 5.200 g - 52% Water approx.
- 5.000 g - 50% Flour
- 5.000 g - 50% VitaSon Multigranen (multigrain) 50%
- 250 g - 2.5% Fresh yeast
Decoration:
- Sesame seeds
- Sunflower seeds
Working method
- Mix all in gredients in to a smooth and well developed dough.
- Dough temperature: approx. 26ºC.
- Scale dough pieces approx. 450 grams and rounding.
- Dough proof: approx. 35 minutes.
- Mould as a short loaf and decorate with a mixture of sesame and sunflower seeds. After that place the dough pieces in baking tins.
- Final proof: approx. 65 minutes.
- Just before baking incise as desired.
- Bake: approx. 35 minutes at 230ºC with steam.
