Ardennes Tin Bread

Ingredients

  • 5.200 g - 52% Water approx.
  • 5.000 g - 50% Flour
  • 5.000 g - 50% VitaSon Multigranen (multigrain) 50%
  • 250 g - 2.5% Fresh yeast

Decoration:

  • Sesame seeds
  • Sunflower seeds

Working method

  • Mix all in gredients in to a smooth and well developed dough.
  • Dough temperature: approx. 26ºC.
  • Scale dough pieces approx. 450 grams and rounding.
  • Dough proof: approx. 35 minutes.
  • Mould as a short loaf and decorate with a mixture of sesame and sunflower seeds. After that place the dough pieces in baking tins.
  • Final proof: approx. 65 minutes.
  • Just before baking incise as desired.
  • Bake: approx. 35 minutes at 230ºC with steam.
