Ingredients
- 10.000 g – 100% Wholemeal (Naturel)
- 6.800 g – 68% Water approx.
- 2.500 g – 25% BARLEYmax Soft Rolls Mix
- 750 g – 7,5% Fresh yeast
- 150 g – 1,5% Salt
Decoration
- Oatflakes
Working method
- Knead all ingredients into a smooth and well developed dough.
- Dough temperature: approx. 26°C.
- Scaling: weigh approx. 2000 gram (30 pieces).
- Dough proof: approx. 10 minutes.
- Divide, round up and decorate with oatflakes. Place the dough pieces on baking sheets.
- Final proof: approx. 70 minutes.
- Bake: for approx. 9 minutes at 260-225°C.
