Ingredients

  • 10.000 g – 100% Wholemeal (Naturel)
  • 6.800 g – 68% Water approx.
  • 2.500 g – 25% BARLEYmax Soft Rolls Mix
  • 750 g – 7,5% Fresh yeast
  • 150 g – 1,5% Salt

Decoration

  • Oatflakes

Working method

  • Knead all ingredients into a smooth and well developed dough.
  • Dough temperature: approx. 26°C.
  • Scaling: weigh approx. 2000 gram (30 pieces).
  • Dough proof: approx. 10 minutes.
  • Divide, round up and decorate with oatflakes. Place the dough pieces on baking sheets.
  • Final proof: approx. 70 minutes.
  • Bake: for approx. 9 minutes at 260-225°C.
