Celebread with Cheese Topping (Pomodori) based on QS Croustillant (Crispy)
Ingredients
- 10000 g - 100% Flour
- 1500 g - 15% Sonextra Marinade Pomodori
- 300 g - 3% QS Croustillant (Crispy)
- 250 g - 2.5% Fresh yeast
- 100 g - 1% Salt
- 5500 g - 55% Water approx.
Decoration:
- Grated cheese
Working method
- Mix all ingredients into a smooth and well developed dough.
- Dough temperature: approx. 26ºC.
- Scale: approx. 1100 grams (30 pieces).
- Dough proof: approx. 10 minutes.
- Divide, round up and place 10 pieces into a pie-plate.
- Final proof: approx. 70 minutes.
- Baking: approx. 16 minutes at 240ºC.
- Decorate as desired. preferably with grated cheese.
