Cheese Bread

Cheese Bread based on VitaSon Méditerranée

Ingredients

  • 5000 g - 50% Flour
  • 5000 g - 50% VitaSon Méditerranée 50%
  • 400 g - 4% Fresh yeast
  • 5500 g - 55% Water approx.

Decoration:

  • 500 g - 5% Grated old cheese

Working method

  • Mix all ingredients into a smooth and well developed dough It needs a longer mixing time at low speed of approx. 5 minutes.
  • Dough temperature: approx. 27ºC.
  • Scale: dough pieces approx. 350 gram and rounding.
  • Dough proof: approx. 10 minutes.
  • Mould as a baguette and roll it through the grated old cheese. Stab it into 8 pieces and place it in a pie plate and place the pie plates on baking sheets
  • Final proof: approx. 60 minutes.
  • Baking: approx. 18 minutes at 230ºC with steam.
