Ingredients

  • 5000 g - 50% Flour (High-protein)
  • 5000 g - 50% Vitason Mais (maize) 50%
  • 1000 g - 10% QS Luxe Superieur (Soft Luxury Bread)
  • 800 g - 8% Fresh Yeast
  • 500 g - 5% Crème Sonnomel
  • 5600 g - 56% Water approx.

Filling:

  • 4000 g - 40% Raisins
  • 2000 g - 20% Ginger

Working method

  • Mix all ingredients into a smooth and well developed dough After kneading directly mix filling in
  • Dough temperature: approx. 26ºC
  • Scale: approx. 1800 grams (30 pieces)
  • Divide but do not round up Place the dough pieces on baking sheets
  • Final proof: Approx. 60 minutes
  • Baking: Approx. 9 minutes at 250ºC
For better softness in the baked product, we recommend to wash again delivered raisins/currants and soak them briefly
