Ingredients
- 10000 g - 100% Vitason Danish Rye 100%
- 170 g - 1.7% Fresh Yeast
- 6000 g - 60% Water approx.
Decoration:
- Sesame Seeds
Working method
- Mix all ingredients in 10 minutes in to a smooth dough
- Dough temperature: approx. 27ºC
- Bulk proof: Approx. 30 minutes
- Scale: Dough pieces approx. 1400 grams
- Mould as a long loaf Decorate with sesame seeds and place the dough pieces into baking tins
- Final proof: Approx. 50 minutes
- Baking: Approx. 55-60 minutes at 190ºC
