Dark Sunflower Toast Bread - Sonplus Bruin (Brown) and CreationS Dark Malt

- 7500 g - 75% Wholemeal
- 2500 g - 25% CreationS Dark Malt
- 1500 g - 15% Sunflower Seeds
- 300 g - 3% Sonplus Bruin (Brown)
- 150 g - 1.5% Salt
- 6300 g - 63% Water approx.
Decoration:
- 1000 g - 10% Sunflower Seeds
Working method
- Mix all ingredients into a smooth and well developed dough
- Dough temperature: approx. 27ºC
- Scale: Dough pieces approx. 815 grams and rounding
- Dough proof: Approx. 40 minutes
- Mould as a long loaf. Decorate with sunflower seeds and place the doegh pieces into baking tins
- Final proof: Approx. 65 minutes
- With lid approx. 40 minutes at 235ºC
