Extra Dark Sunflower Tin Bread
Ingredients
- 6000 g - 60% Wholemeal
- 4000 g - 40% CreationS Dark Malt
- 300 g - 3% Proson Bruin Royal (brown)
- 150 g -1.5% Salt
- 6000 g - 60% Water approx.
Decoration::
- 300 g - 3% Sunflower Seeds
Filling::
- 2000 g - 20% Burnished Sunflower Seeds
Working method
- Mix all ingredients into a smooth and well developed dough After kneading directly mix filling in
- Dough temperature: approx. 26ºC
- Scale: Dough pieces approx. 900 grams and rounding
- Dough proof: Approx. 35 minutes
- Mould as a long loaf. Decorate with Sunflower seeds an place the dough pieces into baking tins
- Just before baking incise as desired
- Final proof: Approx. 65 minutes
- Baking: Approx. 40 minutes at 240ºC with steam
