Frisian Sugar Bread - Crème Sonnomel and Sonplus Vruchten Extra (Fruited Bread Extra)

Ingredients

  • 10000 g - 100% Flour (High-protein)
  • 200 g - 2% Salt
  • 600 g - 6% Yeast
  • 1000 g - 10% Sonplus Vruchten Extra (Fruited Bread Extra)
  • 500 g - 5% Crème Sonnomel
  • 5800 g - 58% Water approx.

Filling:

  • 6000 g - 60% Sugar nibs P4
  • 400 g - 4% Lemon zest
  • 20 g - 0.2% Cinnamon

Working method

  • Mix all ingredients into a well developed dough. After mixing directly add the filling
  • Dough temperature: approx. 26ºC
  • Mould and place them in aluminum trays
  • Final proof: Approx. 40 minutes
  • Determine the time based on the dough weight and bake at approx. 220ºC Bake it in a soft manner, use the bottom plates if necessary
  • Scale: Approx. 350 grams (depending on the size of the aluminum tray)
  • Dough rest: Approx. 25 minutes
