Ingredients
- 10000 g - 100% Flour
- 1000 g - 10% Sugar
- 500 g - 5% Fresh Yeast
- 300 g - 3% Sonextra Shortening
- 175 g -1.75% Sonplus Hamburger Concentrate
- 150 g - 1.5% Salt
- 5000 g - 50% Water approx.
Working method
- Mix all ingredients into a smooth and well developed dough
- Dough temperature: approx. 27ºC
- Dividing: Approx. 1800 grams (30 pieces)
- Dough proof: Approx. 10 minutes
- Divide and round up Decorate if desired Place the dough pieces on (hamburger) baking sheets After 10 minutes pin flat
- Final proof: Approx. 80 minutes
- Baking: approx. 9 minutes at 250ºC
