Ingredients

  • 7.500 g Water approx. 75%
  • 6.830 g Sonfit Low Carb Brown 68.3%

Working method

  • Knead all ingredients into a smooth and good developed dough. Mix and knead longer than usual.
  • Dough temperature: approx. 26°C.
  • Dough pieces approx. 650 grams and rounding.
  • Dough proof: approx. 30 minutes.
  • Mould the dough pieces as desired, round or long shape and place them on arice flower prepared inserters or baking sheets.
  • Final proof: approx. 60 minutes.
  • Incise as desired just before baking.
  • Bakek: approx. 35 minutes at 230-240°C.
