Mediterranean Toast Bread
Ingredients
- 5000 g - 50% Flour
- 5000 g - 50% Vitason Méditerranée 50%
- 5700 g - 57 % Water approx.
Working method
- Knead all ingredients into a smooth and well developed dough
- Dough temperature: approx. 27ºC
- Scale: Dough pieces approx. 900 gram and rounding
- Dough proof: Approx. 40 minutes
- Final proof: Approx. 65 minutes
- Just before baking cover the tin. Approx. 30-35 minutes at 230ºC
- Mould as a long loaf. Place the dough pieces into casino baking tins
If necesarry add savory filling such as olives, dried tomato, mozzarella, etc
