Mexican Schnecken based on Sonplus Soft Silk and SonPulse Mexican

Ingredients

Dough:

  • 1.500 g – 100% Flour (high-protein)
  • 840 g – 56% Water approx.
  • 60 g – 4% Fresh Yeast
  • 22,5 g – 1,5 Salt
  • 15 g – 1% SONPLUS SOFTSILK

Filling:

  • 1.000 g – 66,6% SONPULSE MEXICAN
  • 150 g – 10% Water approx.

Working method

  • Thin the SonPulse Mexican with water.
  • Mix all ingredients into a smooth and well developped dough.
  • Dough temperature approx. 26°C.
  • Let the dough rest approx. 10 minutes.
  • Roll the dough into a slide at 3 mm thickness.
  • Spread the SonPulse Mexican out over the slide and make a roll.
  • Cut pieces of 2,5 cm wide and place them in baking rings on prepared baking slides.
  • Final proof approx. 60 minutes.
  • Baking approx. 20 minutes at 210°C.
