Ingredients
- 6.300 g Water approx. 63%
- 6.000 g Wholemeal flour 60%
- 4.000 g Flour 40%
- 1.000 g Proson Vruchten Citrus (fruit citrus) 10%
- 200 g Salt 2%
- 800 g Yeast 8%
Filling:
- 2.500 g Raisins 25%
- 1.500 g Hazelnuts 15%
Working method
- Mix all ingredients into a smooth and well developed dough.
- Dough temperature: approx. 26°C.
- Scale: approx. 2200 grams for 30 pieces.
- Dough proof: approx. 10 minutes.
- Dividing and round up.
- Final proof: approx. 70 minutes.
- Bake: approx. 10 minutes at 250ºC.
