Ingredients

  • 6.300 g Water approx. 63%
  • 6.000 g Wholemeal flour 60%
  • 4.000 g Flour 40%
  • 1.000 g Proson Vruchten Citrus (fruit citrus) 10%
  • 200 g Salt 2%
  • 800 g Yeast 8%

Filling:

  • 2.500 g Raisins 25%
  • 1.500 g Hazelnuts 15%

Working method

  • Mix all ingredients into a smooth and well developed dough.
  • Dough temperature: approx. 26°C.
  • Scale: approx. 2200 grams for 30 pieces.
  • Dough proof: approx. 10 minutes.
  • Dividing and round up.
  • Final proof: approx. 70 minutes.
  • Bake: approx. 10 minutes at 250ºC.
