Multigrain Loaf
Ingredients
- 7000 g - 70% Flour
- 3000 g - 30% Vitason Multi 10 30%
- 300 g - 3% Fresh Yeast
- 5700 g - 57% Water approx.
Decoration:
- 1000 g - 10% (Mixture of ) Seeds
Working method
- Mix all ingredients into a smooth and wel developed dough
- Dough temperature: approx. 27ºC
- Bulk proof: Approx. 15 minutes
- Scale: Dough pieces approx. 500 grams and rounding
- Dough proof: Approx. 20 minutes
- Mould as a long loaf If desired decorate with (a mixture of) seeds Place the dough pieces on with rice flower prepared inserter or baking sheets
- Final proof: Approx. 60 minutes
- Just before baking incise as desired
- Baking: Approx. 35 minutes at 230ºC
