Pro Heart Toast Bread
Ingredients
- 5.700 g Water approx. 57%
- 5.000 g Wholemeal 50%
- 5.000 g SonFit ProHeart 50%
- 220 g Fresh yeast 2.2%
Decoration:
- 250 g Sesame 2.5%
- 250 g Linseed 2.5%
- 250 g Sunflower 2.5%
Working method
- Mix all ingredients into a smooth and well developed dough.
- Dough temperature: approx. 26°C.
- Scale dough pieces approx. 900 gram and rounding.
- Dough proof: approx. 20 minutes.
- Mould as a long loaf.
- Decorate with the mixture of sesame, linseed and sunflower seeds and place douch pieces in toast baking tins.
- Final proof: approx. 65 minutes.
- Bake: approx. 35-40 minutes at 225ºC with a little steam.
- Bake: in rotation oven: approx. 35-40 minutes at 215ºC with a little steam.
