Ingredients

  • 6000 g -60% Wholemeal
  • 4000 g - 40% Flour
  • 1500 g -15% QS Tarwemoutbollen (Wheat Malt Buns)
  • 500 g - 5% Fresh Yeast
  • 150 g - 1.5% Salt
  • 6000 g - 60% Water approx.

Filling:

  • 4000 g - 40% Chopped onion

Decoration:

  • 500 g - 5% Grated cheese approx.

Working method

  • Mix all ingredients into a smooth and well developed dough After kneading directly mix filling in
  • Dough temperature: approx. 26ºC
  • Scale: approx. 1800 grams (30 pieces)
  • Dough proof: Approx. 15 minutes
  • Decorate with grated cheese (It is possible to adjust the taste by adding pepper and paprika powder to the grated cheese)
  • Final proof: Approx. 70 minutes
  • Baking: approx. 9 minutes at 260ºC
  • Divide and round up Place the dough pieces on baking sheets
