Ingredients
- 6000 g -60% Wholemeal
- 4000 g - 40% Flour
- 1500 g -15% QS Tarwemoutbollen (Wheat Malt Buns)
- 500 g - 5% Fresh Yeast
- 150 g - 1.5% Salt
- 6000 g - 60% Water approx.
Filling:
- 4000 g - 40% Chopped onion
Decoration:
- 500 g - 5% Grated cheese approx.
Working method
- Mix all ingredients into a smooth and well developed dough After kneading directly mix filling in
- Dough temperature: approx. 26ºC
- Scale: approx. 1800 grams (30 pieces)
- Dough proof: Approx. 15 minutes
- Decorate with grated cheese (It is possible to adjust the taste by adding pepper and paprika powder to the grated cheese)
- Final proof: Approx. 70 minutes
- Baking: approx. 9 minutes at 260ºC
- Divide and round up Place the dough pieces on baking sheets
