Ingredients
- 5000 g - 50% Flour
- 5000 g -50% Vitason Donker Meergranen (multigrain dark) 50%
- 1000 g -10 % Sonplus Luxe (Luxury)
- 600 g -6% Fresh Yeast
- 5500 g - 55% Water approx.
Working method
- Knead all ingredients into a smooth and well developed dough
- Dough temperature: approx. 26ºC
- Scale 1650 gram (30 pieces)
- Dough rest: Approx. 10 minutes
- Final proof: Approx. 75 minutes
- Baking: Approx. 9 minutes at 260ºC
- Divide and round up. Place the doughpieces on the bakingsheet
- Decorate as desired
