Ingredients

  • 5000 g - 50% Wholemeal Flour
  • 5000 g - 50% VitaSon ProHart
  • 1500 g - 15% QS Luxe Superieur (Soft Luxury Bread)
  • 500 g - 5% Fresh Yeast
  • 5700 g - 57% Water approx.

Working method

  • Mix all ingredients into a smooth and well developed dough
  • Dough temperature: approx. 26ºC.
  • Scale: approx. 1600 gram (30 pieces)
  • Dough proof: Approx. 10 minutes
  • Divide and round up
  • Decorate the dough pieces with sesame, linseed or sunflower seeds and place them on baking sheets
  • Final proof: Approx. 75 minutes
  • Baking: Approx. 8 minutes at 260ºC
