Ingredients
- 5000 g - 50% Wholemeal Flour
- 5000 g - 50% VitaSon ProHart
- 1500 g - 15% QS Luxe Superieur (Soft Luxury Bread)
- 500 g - 5% Fresh Yeast
- 5700 g - 57% Water approx.
Working method
- Mix all ingredients into a smooth and well developed dough
- Dough temperature: approx. 26ºC.
- Scale: approx. 1600 gram (30 pieces)
- Dough proof: Approx. 10 minutes
- Divide and round up
- Decorate the dough pieces with sesame, linseed or sunflower seeds and place them on baking sheets
- Final proof: Approx. 75 minutes
- Baking: Approx. 8 minutes at 260ºC
