Solar Orb
Ingredients
- 5000 g - 50% Flour
- 5000 g - 50% VitaSon Zonnepit (sunflowerseed) 50%
- 5500 g - 55% Water approx.
Working method
- Mix all ingredients into a smooth and well developed dough
- Dough temperature: approx. 26ºC
- Scale: Dough pieces approx. 450 grams and rounding
- Dough proof: Approx. 40 minutes
- Mould as a round loaf Place the dough pieces on baking sheets and flatten slightly.
- Stab in the middle with a round stick Decorate the inside with sunflower seeds and decorate the outside with maisgroats.
- Incise like a solar orb
- Final proof: Approx. 65 minutes
- Baking: Approx. 35 minutes at 230ºC with steam
Combine Vitason Zonnepit with olive oil and dried chives, used to obtain a distinctive crusty bread ..
