Ingredients
- 7500 g - 75% Flour (Type 550)
- 2500 g - 25% Sonmix Vitalplus
- 150 g - 1.5% Salt
- 5600 g - 56% Water approx.
Working method
- Mix all ingredients into a smooth and well developed dough
- Dough temperature: approx. 26°C
- Scale: Dough pieces approx. 600 grams
- Mould loosly as a round loaf Decorate with a mixture of sesame seeds and Vitason Volfit and place the dough pieces on with rice flour prepared inserter
- Baking: Approx. 50 minutes at 220°C with steam Open steam slide in time
- Bulk proof: Approx. 15 minutes
