Sunflower Kernel Sandwich Bread
Ingredients
- 5000 g - 50% Flour T65
- 5000 g - 50% VitaSon Zonnepit (sunflowerseed) 50%
- 1000 g - 10% Dairy Butter
- 400 g - 4% Caster Sugar
- 200 g - 2% Fresh Yeast
- 5400 g -54% Water approx.
Working method
- Knead all ingredients into a smooth and well developed dough
- Dough temperature: approx. 26ºC
- Scale: approx. 930 grams and rounding
- Dough proof: Approx. 50 minutes
- Mould as a long loaf and divide the dough pill into four equal pieces. Turn each piece a quarter and lay them against each other in a casino baking tin (four pieces)
- Final proof: Approx. 60 minutes
- Insert at 260ºC and bake approx. 30 minutes at 230ºC
