Valentine Hearts
Ingredients
- 10000 g - 100% Flour
- 20000 g - 200% Sonnet Variatiemix Kwark
- 5000 g - 50% Eggs
- 7700 g - 77% Water approx.
Filling:
- 5000 g - 50% Raisins
- 2500 g - 25% Fruitmix
Working method
- Mix all ingredients into a smooth dough. Mixing time approx. 5 minutes
- Dough temperature: approx. 20ºC
- 20 minutes
- Roll the dough pieces into a slice with a thickness of 6 mm, push it out with a heart shaped plug. Lay the hearts on the board and brush with eggwash.
- Baking: Approx. 16 minutes at 190ºC.
- Decorate the baked product discretion with Red and White colored fondant and musket seed.
- Baking in rotation oven: Approx. 16 minutes at 160ºC.
For better softness in the baked product, we recommend to wash again delivered raisins/currants and soak them briefly
