Valentine Hearts

Ingredients

  • 10000 g - 100% Flour
  • 20000 g - 200% Sonnet Variatiemix Kwark
  • 5000 g - 50% Eggs
  • 7700 g - 77% Water approx.

Filling:

  • 5000 g - 50% Raisins
  • 2500 g - 25% Fruitmix

Working method

  • Mix all ingredients into a smooth dough. Mixing time approx. 5 minutes
  • Dough temperature: approx. 20ºC
  • 20 minutes
  • Roll the dough pieces into a slice with a thickness of 6 mm, push it out with a heart shaped plug. Lay the hearts on the board and brush with eggwash.
  • Baking: Approx. 16 minutes at 190ºC.
  • Decorate the baked product discretion with Red and White colored fondant and musket seed.
  • Baking in rotation oven: Approx. 16 minutes at 160ºC.
For better softness in the baked product, we recommend to wash again delivered raisins/currants and soak them briefly
