  • 100 g – 1% FermenSon Duo
  • 100 g – 1% Sonextra Shortening Clean Label
  • 6200 g – 62% Water approx.

Working method

  • Knead all ingredients into a smooth and well developed dough
  • Dough temperature approx. 27°C
  • Scale dough pieces approx. 910 grams and rounding
  • Dough proof approx. 5-10 minutes
  • Mould as a long loaf, place the dough pieces into toast baking tins
  • Final proof approx. 60-70 minutes
  • Baking approx. 30 minutes at 230°C
