Ingredients

  • 16.000 g - 100% Flour
  • 9.920 g - 62% Water approx.
  • 320 g - 2% FermenSon Prestige
  • 320 g - 2% Fresh Yeast
  • 160 g - 1% Sonextra Shortening Clean Label
  • 136 g - 1,36% Salt

Working method

  • Knead all ingredients into a smooth and well developed dough.
  • Dough temperature: approx. 27ºC.
  • Scale dough pieces approx. 910 grams and rounding.
  • Dough proof: approx. 5 minutes.
  • Mould as a long loaf and place the dough pieces into toast baking tins.
  • Final proof: approx. 60-70 minutes.
  • Bake: approx. 30 minutes at 230°C.
