Ingredients
- 16000 g - 100% Flour
- 320 g - 2% FermenSon Prestige
- 320 g - 2% Fresh Yeast
- 136 g - 1,36% Salt
- 160 g - 1% Sonextra Shortening Clean Label
- 9920 g - 62% Water approx.
Working method
- Knead all ingredients into a smooth and well developed dough
- Dough temperature: approx. 27ºC
- Scale: Dough pieces approx. 910 grams and rounding
- Dough proof: Approx. 5 minutes
- Mould as a long loaf. Place the dough pieces into toast baking tins
- Final proof: Approx. 60-70 minutes
- Baking: Approx. 30 minutes at 230°C
