Ingredients
- 16.000 g - 100% Flour
- 9.920 g - 62% Water approx.
- 320 g - 2% FermenSon Prestige
- 320 g - 2% Fresh Yeast
- 160 g - 1% Sonextra Shortening Clean Label
- 136 g - 1,36% Salt
Working method
- Knead all ingredients into a smooth and well developed dough.
- Dough temperature: approx. 27ºC.
- Scale dough pieces approx. 910 grams and rounding.
- Dough proof: approx. 5 minutes.
- Mould as a long loaf and place the dough pieces into toast baking tins.
- Final proof: approx. 60-70 minutes.
- Bake: approx. 30 minutes at 230°C.
