White Toast Bread based on the SonPlus Softsilk
Ingredients
- 10.000 g Flour 100%
- 5.400 g Water 54%
- 500 g Sugar 5%
- 200 g Butter 2%
- 150 g Salt 1.5%
- 100 g Yeast dry 1%
- 50 g SONPLUS SOFT SILK 0.5%
Working method
- Knead all ingredients into a smooth and well developed dough.
- Dough temperature: approx. 26°C.
- Dough pieces approx. 800 grams and rounding.
- Dough proof max 10 - 15 minutes.
- Mould into a long shape and place in baking tins.
- Final proof approx. 70 minutes.
- Bake approx. 25/30 minutes at 210ºC.
