Mix all ingredients into a smooth and well developed dough.
Dough temperature: approx. 26°C.
Scale dough pieces approx. 800 grams and rounding.
Dough proof: approx. 50 minutes.
Mould as a long loaf and decorate with a mixture of sunflower and sesame seeds. Place the dough pieces into toast baking tins.
Final proof: approx. 60 minutes (3/4 proofing time).
Just before baking place the lids on the baking tins.
Bake: approx. 35 minutes at 220°C.
