- 5.000 g - 50% Wholemeal
- 5.000 g - 50% BARLEYmax Rustic Mix
- 250 g - 2,5% Fresh yeast
Knead all ingredients into a smooth and well developed dough.
Dough temperature: approx. 26°C.
Scale dough pieces (910 grams or 460 grams) and rounding.
Dough proof: approx. 45 minutes.
Mould as desired, round or long shape, and place the dough pieces into proofing baskeds or on with rice flour prepared inserters or baking sheets.
Final proof: approx. 60 minutes.
Bake: approx. 35-40 minutes at 230°C with steam (small bloomers approx. 25 minutes).
