Brown Tin bread (Extra Dark)
Brown Tin bread (Extra Dark) based on Sonplus Bruin (Brown) and Sonextra Bruin (Sonextra brown)
- 7000 g - 70% Wholemeal
- 3000 g - 30% Flour
- 300 g - 3% Sonplus Bruin (Brown)
- 200 g - 2% Fresh yeast
- 150 g - 1.5% Salt
- 100 g - 1% Sonextra Bruin (Sonextra brown)
- 5700 - 590 g - 57 - 59% Water approx.
Mix all ingredients into a smooth and well developed dough.
Dough temperature: approx. 27°C.
Scale: dough pieces approx. 910 grams and rounding.
Dough proof: approx. 40 minutes.
Mould as a long loaf and place the dough pieces into baking tins.
Final proof: approx. 70 minutes.
Baking: approx. 35-40 minutes at 240°C.
