Celebread with Cheese Topping (Pomodori) based on QS Croustillant (Crispy)

Ingredients

  • 10000 g - 100% Flour
  • 1500 g - 15% Sonextra Marinade Pomodori
  • 300 g - 3% QS Croustillant (Crispy)
  • 250 g - 2.5% Fresh yeast
  • 100 g - 1% Salt
  • 5500 g - 55% Water approx.

Decoration:

  • Grated cheese

Working method

  • Mix all ingredients into a smooth and well developed dough.
  • Dough temperature: approx. 26ºC.
  • Scale: approx. 1100 grams (30 pieces).
  • Dough proof: approx. 10 minutes.
  • Divide, round up and place 10 pieces into a pie-plate.
  • Final proof: approx. 70 minutes.
  • Baking: approx. 16 minutes at 240ºC.
  • Decorate as desired. preferably with grated cheese.
